Verdine Etoria is an ethnographic researcher primarily interested food and restaurants. His doctoral thesis was a covert ethnography of restaurant labour for which he capitalised on 20 years’ experience as a chef to gain legitimate employment in four different restaurants over the course of the project. His research draws out themes such as work and occupational identity, precarity and inequality, class and social mobility, communities and networks. He continues to research food and restaurants in the context of responses and outcomes to the Covid crisis. He tweets @vjetoria.
